Vegan recipes can be super delicious and so easy. Whipped cream and "butter cream frosting" are two of my favorites. All you need is some whole-fat coconut milk ( the kind where the cream separates out of the milk when chilled), vanilla and powered sugar. Chill the milk, bowl and beaters before starting. Put just the solid cream from your can of coconut milk in your chilled bowl. Save the liquid for another recipe - coconut rice would be good. Add a teaspoon of good vanilla and 1/4 cup of powered sugar. Then whip it up. It gets fluffy pretty quickly. You can store it in the fridge for a few days - rewhip if needed.
